Great weekend, AWESOME soup

This weekend was pretty fun. Saturday I ran 10 miles (they were brutal...more to come later but I think I am going to seriously re-tool my marathon training for these last two months), then met Heidi and her sister Erika at Mount Vernon (George Washington's home) for the annual Colonial Crafts Fair. It was FANTASTIC and Mount Vernon has really changed since I was there with Heidi about five years ago, so we had a blast. Then we went to dinner at the Fish Market in Old Town Alexandria - also a blast!

Saturday night I stayed in and I can't really remember what I did, even though it was last night! I think it involved a lot of TV watching and James and I did talk over Skype, which is always fun.

This morning I got up, did some work, and then met my friends Jon and Suzanne in DC for lunch at this awesome Greek deli near where they live in Woodley Park (a neighborhood in DC near the Zoo). THEN I called my friend Cathy Cochran because she was in DC visiting her daughter who is living here for the next year while she does a volunteer mission for their church at an AIDS assisted-living facility. Cathy and Cameron (her daughter) were tooling around DC near where I was, so I met up with them and had a ball!!

Then I came home to Alexandria, went to Home Depot (sadly no lettuce seeds to speak of! Come on people, it is lettuce planting time!!!), went to Target, went to grocery store, etc. Then I came home and made the most awesome-est soup EVER. It's called Eggplant Mykonos and I got it out of the Moosewood Cookbook. I found the recipe online here, if you're interested. Holy moly, it's phenomenal. The fennel really sets it off, and I added a can of rinsed pinto beans and a cup of whole wheat rice...and a couple dashes of Texas Pete. The picture doesn't do it justice because all I have is the camera on my BlackBerry, but trust me, it is YUM YUM YUM!!!
